About This Wine:
Named after a series of limestone outcrops ascending the Niagara Escarpment above our Cave Spring Vineyard - known as ‘The Adam Steps’ - this wine originates from a parcel of vines nestled on the hillside just below this unique formation. Exhibiting the capacity of the noble Riesling grape to maintain riveting tension between lush fruit character and penetrating acidity it weaves together the power and finesse of this great terroir.
A single block of 38 year old Riesling vines at Cave Spring Vineyard
Stony clay till composed primarily of limestone and dolostone mixed with sandstone, shale and small amounts of granite and gneiss; soil depth ranges from 4 to 8 m, overlying moraine and sandstone/shale bedrock.

Yield- 3.3 tonnes/acre
A cool-temperature fermentation was carried out over a 3 week period in stainless steel tanks using indigenous yeasts. Fermentation arrested on its own at medium dryness.

Greeting the nose is cornucopia of ripe fruits, including yellow and pink grapefruit, Honeydew melon and yellow plum, with accents of wet stone and fresh tarragon. The palate is light in body but richly concentrated, with juicy peach and lime fruit and a racy streak of acidity at the outset. The mid-palate is delicate yet powerful, with a combination of crystalline textures and fully extracted citrus and soft, tree fruit flavours. The acidity returns to prominence on the finish, carrying persistent notes of citrus rind, herbs and wet stone. Defined by great tension between fruit and acidity, this vintage of The Adam Steps shows just how concentrated lower alcohol Riesling can be in our region.
Light cream soups (e.g., asparagus, leek); lemongrass-barbecued pork; liver with onion and bacon; fish satay with spicy peanut sauce; Wiener Schnitzel; sweet and sour beef; mild cow’s-milk cheeses; duck à l’orange; sausages with sauerkraut and apples; chicken curry; spicy shrimp stir fry.
The lush fruitiness and overall integration of this vintage makes it very appealing in the short to medium term. But make no mistake, its structure and high level of extraction will reward patience; expect this wine to gain in complexity through at least 2019.
