About This Wine:
This wine originates from grapes grown in selected vineyards along the south shore of Lake Ontario in the Niagara Peninsula. These clusters were left on the vine to partially raisin during late autumn, with a further concentration of sugars and acids occurring when the berries were partially frozen by the first deep frosts of the season. Selectively hand-harvested and pressed in a semi-frozen state, they deliver a sweet wine with an ideal balance of luscious fruit flavours and crisp acidity.

Harvest Data:
Partially frozen Riesling grapes were selectively hand-harvested between Dec. 17, ’07 and Jan. 8, ’08 at temperatures of -7C.

pH- 3.15
Yield- 20 hl/ha 
 
Vinification:
Fermentation occurred in small stainless steel tanks at cold cellar temperatures over a 30 day period.

Tasting Notes:
Ginger-spiced pear preserve, sultana raisins, lychee and apricot show on the nose; the palate is rich and medium-bodied with apricot/peach fruit, followed by a succulent, cinnamon-tinged mid-palate and a long finish of pear crumble and comb honey; from beginning to end, a core of brilliant acidity lifts and balances the palate (9/08)
