About This Wine:
This wine originates from our Lincoln Lakeshore vineyards, near Lake Ontario, where on-shore breezes slowly desiccate Riesling grapes in late autumn. Further concentrated when partially frozen on the vine by the first frosts of the season, these clusters produce a luscious, sweet wine with an ideal balance of acidity.

Clay-loam till composed primarily of red shale and sandstone, with traces of limestone.

Vinification:
Partially frozen Riesling grapes were selectively harvested during the night at temperatures of -7 ˚C. Fermented in small, stainless steel tanks at cool temperatures over a 20-day period using selected yeast strains.

Tasting Notes:
The nose is highly aromatic with aromas of peach, apricot and poached pear over top notes of exotic citrus, spice and comb honey. The palate is full and sweet with a round, seamless feel, gently lifted by well integrated acidity throughout. Rich flavours of sultana raisins, dried apricot and orange marmelade dominate, carrying with great intensity alongside nuances of pear preserve long onto the finish.
Serving Suggestions:
Savoury – foie gras, pâté, seafood terrines, or hot and sour soups as well as blue or aged cow’s milk cheeses;
Dessert – apple or pear pastries, Sabayon on poached peaches, citrus, nut tortes and crème brûlée

Best consumed 2019 through 2025; will hold through at least 2028
