About This Wine:
This wine originates from grapes grown in selected vineyards along the south shore of Lake Ontario in the Niagara Peninsula. These clusters were left on the vine to partially raisin during late autumn, with a further concentration of sugars and acids occurring when the berries were partially frozen by the first deep frosts of the season. Selectively hand-harvested and pressed in a semi-frozen state, they deliver a sweet wine with an ideal balance of luscious fruit flavours and crisp acidity.

Partially frozen Riesling grapes were selectively harvested during the night at temperatures of -7 ˚C. Fermented in small, stainless steel tanks at cool temperatures over a 20-day period using selected yeast strains.

On the nose, aromas of Bartlett pear, anise, pineapple and dried apricot emerge atop notes of lemon drop, cut grass and fresh sage. The palate is sweet and luscious yet never cloying due to its vigorous acidity and substantial body. Echoing the nose with pear fruit surrounded by notes of apricot and citrus, the wine remains crisply structured throughout, with a brilliant seam of acidity providing a clean, polished finish redolent with flavours of orange peel, roasted almond and licorice.
Savoury – foie gras, pâté, seafood terrines, or hot and sour soups as well as blue or aged cow’s milk cheeses;
Dessert – apple or pear pastries, Sabayon on poached peaches, citrus, nut tortes and crème brûlée
Enjoyable in its youth, the full body and crisp structure of this vintage will reward a minimum of 10 years of ageing potential.
