About This Wine:
This wine originates from our Cave Spring Vineyard, located on a hillside of the Niagara Escarpment overlooking Lake Ontario known as the Beamsville Bench. Produced from some of our oldest vines, it displays the distinctive mineral character that is the signature of Riesling grown in the limestone-clay soils found at our estate. 
 
Origin:
Seven individual blocks ranging in age from 11 to 40 years, with an average vine age of about 20 years.  
 
Soil:
Stony clay till composed primarily of limestone and dolostone mixed with sandstone, shale and traces of granite and gneiss; soils overlie moraine and sandstone/shale bedrock, and range from 4 to 8 m in depth.

Vinification:
Cool fermentaiton in stainlees steel over a 3-week period using extended lees contact. 100% of the wine was fermented using natural strains that are present on the grapes.

Tasting Notes:
The nose is subtle yet complex, with scents of white pepper, yellow grapefruit and white flowers rising over top hints of licorie and chalk. The palate is dry and medium bodied, with bright yellow plum fruit and crisp acidity up front, a rich yet stony middle and a long, intense finish of grapefruit essence and spice. Tightly strucured throughout, the wine shows tremendous tension and vibrancy.

WINE AND SPIRITS MAGAZINE: The July heat and August thunderstorms made 2018 a tricky vintage in Ontario, further challenged by heavy rain in October. Yet winemaker Angelo Pavan took advantage of the intervening sunny days to coax a firm, full-bodied Riesling out of Cave Spring’s estate vineyard, a parcel that climbs the slope beneath the Niagara Escarpment. The vines – the oldest planted 40 years ago – grow in a stony mix of clay, limestone and sandstone, with some shale, granite and gneiss in the mix; the wine tastes as if their roots literally sucked up the stone, it’s so resolutely earthy and firm. Notes of lime zest and sour lemon add a bracing brightness to the austere mineral flavours, while the wine’s extract gives it a rich texture and grip. This is a Riesling for the main course – lake trout wrapped in bacon wold be ideal. RATED - 93, Best Buy
