About This Wine:
This wine originates from our Cave Spring Vineyard, located on a hillside of the Niagara Escarpment overlooking Lake Ontario known as the Beamsville Bench. Produced from some of our oldest vines, it displays the distinctive mineral character that is the signature of Riesling grown in the limestone-clay soils found at our estate. 
 
Origin:
Seven individual blocks ranging in age from 11 to 40 years, with an average vine age of about 20 years.  
 
Soil:
Stony clay till composed primarily of limestone and dolostone mixed with sandstone, shale and traces of granite and gneiss; soils overlie moraine and sandstone/shale bedrock, and range from 4 to 8 m in depth.

100% Riesling

Vinification:
Cool-temperature fermentation in stainless steel over a 6 week period using 60% selected and 40% indigenous yeasts; 4 months on the fine lees prior to bottling

Tasting Notes:
The nose is subtle yet complex, with scents of white pepper, yellow grapefruit and white flowers rising over top hints of licorie and chalk. The palate is dry and medium bodied, with bright yellow plum fruit and crisp acidity up front, a rich yet stony middle and a long, intense finish of grapefruit essence and spice. Tightly strucured throughout, the wine shows tremendous tension and vibrancy.

What stands out is how different the 2015s are - there's no immediate or even loose connection to past releases.
