About This Wine:
This wine originates from our Cave Spring Vineyard, located on a hillside of the Niagara Escarpment overlooking Lake Ontario known as the Beamsville Bench. Produced from some of our oldest vines, it displays the distinctive mineral character that is the signature of Riesling grown in the limestone-clay soils found at our estate.
Seven individual blocks ranging in age from 11 to 40 years, with an average vine age of about 20 years.
Stony clay till composed primarily of limestone and dolostone mixed with sandstone, shale and traces of granite and gneiss; soils overlie moraine and sandstone/shale bedrock, and range from 4 to 8 m in depth.

Titratable Acidity- 9.51 g/L
Yield- 4 tonnes/acre
Fermentation ocurred at cool temperatures in stainless steel over a 6 week period using selected yeasts strains. It was arrested at near dryness by chilling., with the wine remained on the fine lees for 3 months prior to bottling.

A subtle yet complex nose features scents of white flowers, yellow grapefruit, licorice and pastry over top hints of fresh herbs. The palate is medium bodied and dry with flavours of lime-citrus and Bartlet pear alongside a racy seam of acidity and tight, mineral texture througout. Notes of citrus rind and lemon meringue persist long onto the finish, Dry (D)
Lobster bisque; sashimi (esp. salmon); charcouterie; sautéed trout; quiche Lorraine; Raclette; roast lemon chicken; choucroute garnis; roasted pork loin; aged cow’s milk cheeses (e.g., Gouda).
This vintage possesses the structure to develop until at least 2020, and should continue to cellar through at least 2022.
