About This Wine:
This wine originates from the limestone-rich clay till soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Made from some of our oldest, lowest-yielding vines, it is off-dry in style with a distinctive mineral character that site and vine age alone can deliver. 
 
Origin:
Seven individual blocks of Riesling at Cave Spring Vineyard ranging in age from 8 to 38 years  
 
Soil:
Stony clay and clay-loam till composed primarily of limestone, mixed with sandstone and shale  
 
Composition:
100% Riesling 
 
Harvest Data:
Harvest Date- Oct. 8 - 13
Sugar- 19.2º Brix
Titratable Acidity- 8.97 g/L
pH- 3.04
Yield- 3 tonnes/acre (43 hl/ha) 
 
Vinification:
A cool-temperature fermentation was carried out over a 4 week period in stainless steel tanks using a range of selected yeasts to enhance complexity. Fermentation was arrested at medium dryness by chilling.

Tasting Notes:
The nose is especially aromatic, with scents of mint, anise, lemon drop and ripe Bartlett pear leading the way and nuances of white pepper in behind. The palate is medium bodied and dry in style, with Honeydew melon on the attack followed on the mid-palate by intense pink grapefruit flavours, a firm, stony texture and refreshing notes of fresh herbs. A beautifully integrated seam of acidity carries very persistent flavours of lemon-meringue, spice and citrus rind long onto the finish. This vintage stands out for its explosive aromatics, lively acidity and sturdy, mineral substrate and all of which promises great longevity.

Ageability:
Enjoyable upon release, this wine offers tremendous ageing potential. It will enter its prime around 2016, but offers the concentration and interplay of acidity and body to keep well for a minimum of a decade.
