About This Wine:
Dolomite is named for layers of dolomitic limestone, unique to the Niagara Escarpment. Through the forces of erosion, these rock strata have come to enrich the soils of the Escarpment’s benchlands. Grown in selected vineyards along these gentle slopes, this Riesling bears the mark of its origins. The calcareous clays of these sites contribute to the intense aromatics and mineral textures that are its signature. 
 
Origin:
100% Niagara Escarpment (Beamsville Bench) 
 
Soil:
Stony clay till composed primarily of limestone and dolostone mixed with sandstone, shale and traces of granite and gneiss; soils overlie moraine and sandstone/shale bedrock, and range from 4 to 8 m in depth.

Vinification:
Fermentation occurred at cool temperatures in stainless steel, 60% employing selected yeasts over a 4 week period, and 40% using indigenous yeasts over 6 weeks. The inoculated lots were arrested at medium dryness by chilling, while the naturally fermented portions arrived at this level of dryness without intervention. All parcels remained on their fine lees for a minimum of 3 months prior to assemblage and bottling.

Tasting Notes:
The nose is very fragrant, replete with aromas of mint, fennel, ruby grapefruit and Asian pear alongside nuances of ginger root and white pepper. The palate is just off dry, showing great balance between rich tropical fruit (papaya, pineapple) and chalky acidity up front, followed by a tart yet silky, well-extracted middle. The wine’s bracing acidity tapers into a persistent finish of tropical and citrus fruit flavours.

Ageability:
