About This Wine:
This wine originates from our Cave Spring Vineyard, located on a hillside of the Niagara Escarpment, overlooking Lake Ontario, known as the Beamsville Bench. Grown in the limestone-clay soils, it was bottle fermented and aged sur lie for twelve months prior to disgorging. The result is a dry, delicately aromatic sparkling wine with the distinct, mineral texture of Riesling from our estate.

Vinification:
The base wine was re-fermented in bottle and aged sur lie for 12 months prior to disgorging, with the dosage bringing the wine to a Brut level of dryness.

Tasting Notes:
A dry, lighter bodied brut-style sparkler with aromas of flint, green apple, biscuit and a hint of toast; the palate shows a very fine mousse and refreshing tartness up front, ripe Gala apple flavours and light pie crust notes in the middle and a crisp, invigorating and persistent finish reminiscent of grapefruit essence.
