About This Wine:
Within Niagara, the noble Riesling grape develops to its fullest potential only in specific areas. We have crafted this wine from selected vineyards throughout our region, where limestone-clay soils, elevation and moderating breezes from Lake Ontario have combined to create a medium dry Riesling with an impeccable balance of rich fruit character and mineral acidity.
58% Lincoln Lakeshore; 48% Beamsville Bench
Beamsville Bench - stony clay till composed primarily of limestone, mixed with sandstone and shale; Lincoln Lakeshore- clay-loam till composed primarily of red shale and sandstone.

Titratable Acidity- 7.95 g/L
Yield- 4.24 tonnes (77 hl/ha)
Fermentation ocurred at cool temperatures in stainless steel over a 6 week period using selected yeasts strains. It was arrested at medium dryness by chilling., with the wine remained on the fine lees for 2 months prior to bottling.

Scents of white flower, black liquorice and anise show predominate, with aromas of lemon drop and fresh cut grass in the background. Off dry and medium-bodied, the palate offers flavours of ripe apricot, and lemon rind up front, followed by a broad, concentrated middle palate with a beautiful mineral texture. A steady, well-integrated seam of acidity carries these flavours with good persistence on the finish, where tones of Honey dew melon emerge.
Pan-fried salmon or shellfish; boiled lobster or crabmeat; curried shrimp; buttered chicken; Bavarian-style sausage (weisswurst); barbecue pork; baked ham; breaded veal; roasted poultry and game; as an aperitif.
Ready for consumption upon release, this vintage promises continued development until 2022 if not beyond.
