About This Wine:
Our Pinot Noir originates from vineyards nestled along gently sloping hillsides of the Niagara Escarpment overlooking Lake Ontario. In this area, limestone soils and moderating lake breezes offer ideal conditions for one of the noblest of all red grapes. Traditional in style, it captures the fragrant berry fruit and earthy nuances of Pinot grown in our cool-climate terroir.
90% Beamsville Bench; 10% Lincoln Lakeshore
Niagara Escarpment- stony clay till composed primarily of limestone, mixed with sandstone and shale; Lincoln Lakeshore - clay-loam till composed primarily of red shale and sandstone.
86% Pinot Noir, 14% Gamay
Harvest Date- Sept. 12 - Oct 8
Sugar- 20.8º Brix
Titratable Acidity- 7.75 g/L
Yield- 3 tonnes/acre (52 hl/ha)
A seven day cold maceration was followed by fermentation using selected yeast strains. The wine was then aged for 13 months in 15% new and 85% older French oak barriques and puncheons.

On the nose, juicy red and black berry fruit rise out of the glass, with notes of clove, cracked pepper and saddle leather in behind. The palate medium in body with a creamy softness up front, nicely balanced in the middle by ripe cassis and blackberry fruit and moderate tannins, all beautifully stitched together by a thread of juicy acidity. The finish is extremely persistent with discrete notes of black cherry, cedar and cacao.
Roast of chicken or turkey; spicy sausages; braised veal shank or rabbit; pork tenderloin with berry coulis; tomato-based pasta dishes; mushroom risotto.
Generous and approachable from the outset, this vintage possesses the ripeness and structure to develop until at least 2020.

Although Cave Spring is best known for their Rieslings (they make quite a few) their Pinot Noirs impressed me, too. Their “Dolomite” Pinot is not currently available in the U.S., but this lively red is. Marked by notes of red fruit and spice, this is an excellent example of a cool-climate Pinot at a very good price.
