About This Wine:
The name ‘Dolomite’ refers to the type of limestone that forms the crest of the Niagara Escarpment. Through the forces of erosion, this ancient rock has come to enrich the soils of the hillsides below. Grown along these gentle slopes in our Beamsville Bench vineyard, this Chardonnay-based sparkling wine bears the mark of its origins. The calcareous clays of this site contribute the mineral character and vibrant fruit that are its hallmark.

Vinification:
The base wine was re-fermented in bottle and aged sur lie for a minimum of 18 months prior to disgorging, with the dosage bringing the wine to a Brut level of dryness.

Tasting Notes:
A dry, Brut-style sparkling wine with aromas of ripe red apple, bread dough and toasted nuts; medium bodied on the palate, it is quite round up front with a fine, delicate mousse; the mid-palate shows rich apple fruit balanced by a hint of mineral austerity, followed by a crisp yet full finish of yellow plums and light toastiness.
Serving Suggestions:
Raw oysters; lobster bisque or clam chowder; game terrine; fried or lightly battered shellfish; sushi/sashimi; omelettes and quiches; heavier seafood off the grill (e.g., halibut, prawns); smoked duck; or as an aperitif.
Ageability:
This crisp, Crémant-style sparkler, driven by its primary fruit character, will gain in complexity until at least 2025.
