About This Wine:
This wine is named after a layer of dolomitic limestone forming the crest of the Niagara Escarpment. Through the forces of erosion, these rock strata have come to enrich the soils of the Escarpment’s benchlands below. Grown in selected vineyards along these gentle slopes, this cabernet franc bears the mark of its origins. The calcareous clays of these sites contribute to the spice and mint-berry flavours that are this wine’s hallmark.

A 14-day maceration was followed by gentle pressing and aging for 18 months in predominantly older French, Hungarian and American oak barriques.

A mix of fresh herbs, especially mint, savoury, and tarragon, along with aromas of sour cherry and black pepper greet the nose. Medium in body, notes of herbs and spice continue on the palate, with black pepper, cinnamon, cloves and star anise mingling with rich, dark plum fruit and earthy tones. On the middle, soft, silky tannins and a pleasing lift of acidity emerge to provide structure and clarity, giving way to lingering nuances of smoke and game on the finish.
