About This Wine:
This wine originates from selected parcels of our vineyards located on the benchlands of the Niagara Escarpment. Along these gentle slopes overlooking Lake Ontario, limestone-clay soils, elevation and moderating on-shore breezes combine to capture the distinctive mint-berry character typical of Cabernet Franc in our terroir.

Yield- 4.0 tonnes/acre (69 hl/ha)
A 12 day cold maceration was followed by fermentation using selected yeast strains. The wine was then aged for 14 months in 25% new and 75% older French, American and Hungarian oak barriques and puncheons.

On the nose, juicy red cherry and blackcurrant fruit come to the fore, with notes of eucalyptus, tobacco leaf, cinnamon and mint in behind. The palate is medium-to-full in body with firm tannins and sour cherry fruit up front, nicely balanced in the middle by ripe cassis fruit and round, supple textures around the edges. A juicy thread of acidity is nicely integrated throughout, giving way to an intense and plush finish of dark berries, black pepper and coffee grinds.

Generous and approachable from the outset, this vintage possesses the ripeness and structure to develop until at least 2018.

David Lawrason, 89 points:This is a really charming, lighter weight, pure and well balanced cab franc for immediate enjoyment. Lifted, pretty aromas of raspberry/currant fruit are etched with fresh herbs, tobacco and very mild oak. It's fresh and smooth, yet solid with very good to excellent length. Cave Spring is known for riesling but its reds are impressing of late.
