About This Wine:
This wine was made entirely from Chardonnay grown in the limestone-clay soils of our Cave Spring Vineyard, located in the Niagara Escarpment’s renowned Beamsville Bench. Made in the Traditional Method from the oldest, lowest-yielding vines at our estate, it was aged ‘sur lie’ in bottle for 60 months prior to disgorging, embodying our highest commitment to quality and authenticity.

Tasting Notes:
The nose offers vivid aromas of lemon, pear and ripe apple atop suggestions of bread and hazelnuts. Brut in style, the palate is medium in body with crisp acidity and a fine mousse. The mid-palate is broad and creamy, exhibiting a chalky, stony sensation beneath, providing substance and definition. The finish is long and plush, with notes of yeast, toast and chestnut, yet lifted by a luminous, citrusy edge.
