Three parcels totaling 66.5 ha (164 ac) in two distinct sub-appellations of the Niagara Peninsula:
Overall, 29 ha (71.5 ac) are devoted to Riesling, followed by 10.5 ha (26 ac) to Chardonnay, 9 ha (22 ac) Cabernet Franc and 7 ha (17.5 ac) to Pinot Noir. Remaining plantings are comprised of Gamay, Sauvignon Blanc, Merlot, and Gewürztraminer.
Eighty percent of Cave Spring’s production is dedicated to varietal white wines, with well over half of this percentage focused on Riesling. The remaining 20% is attributed to varietal red wines. Estate vineyards furnish 90% of the winery’s grape supply, with the remaining 25% purchased from two long-term contract growers, also in the Beamsville Bench and Lincoln Lakeshore sub-appellations. Overall, 80% of the grape supply originates from the Beamsville Bench and 20% from the Lincoln Lakeshore.
